'Cooking for Numpties' Part 2 By GM0UHC

Food, and good food especially, is a subject close to my heart.  My recent article prompted some responses which for me is good, because it does demonstrate that radio amateurs like food, and food recipes. One reply even suggested a different recipe for Butternut Squash, which I reproduce in full here. with the author's permission. This Observation From Scotland comes from fellow radio amateur Ian Ropper GM0UHC, so over to Ian!

 

 The thing with butternut squashes is that on their own they don't really have strong flavour but with a few of the right ingredients they can be exquisite. Try the following ...

 
Recipe #1. Cut the squash in half around the 'waist' then cut each half vertically into eighths. Give each piece a coating of olive oil and place in a backing tray. Heat the oven up to 180 deg C. Grind about a dessert spoonful of each of the following ... black peppercorns, sea-salt and if you like, coriander seeds. Add to this mixture one crushed dried red chilli. Now sprinkle this mixture over the oiled pieces of squash. Place in oven for about 40 mins. When it comes out it will be soft and can be scraped off the skin. Serve with a rocket salad and shavings of parmesan or pecorino ... wonderful!!
 
Recipe #2. What about this accidental delight? ... You need to cut the skin off first for this one ... chop the butternut squash into one-inch lumps ... you want it to all cook evenly. Pretend its turnip! But it won't take as long. When it is more or less softened ... but not too much, mash it with butter and add a tablespoon of curry paste ... you choose the strength! It looks and feels like a dahl!
